Your Electric Kettle Can Cook Real Weeknight Dinners

Your Kettle Is Quietly Overqualified

Tuesday is appliance day, and today's star is the humble electric kettle. It boils a liter of water in about three minutes, faster than any stovetop pot, and it uses zero burners. If you've been treating it like a tea butler, it's time for a promotion.

The trick: boiling water is the first step in a lot of dinners. Skip the waiting-for-the-pot game and you've already won half the battle.

The One Rule That Makes It Work

Use the kettle only for heating water, and pour that water over food in a separate heatproof bowl, pot, or mug. Never put food, broth powder, or oil inside the kettle itself. Keep it clean, and cover whatever you pour into with a plate or lid so the heat stays trapped while things soften or steam.

Five Dinners From One Kettle

1. Instant-style noodle bowls. Place 8 ounces of ramen or rice noodles in a large bowl with a handful of frozen veggies and a spoonful of miso or soy sauce. Pour over 3 cups boiling water, cover, and wait 4 to 5 minutes. Top with a soft egg or sesame oil.

2. Couscous with roasted chickpeas. Combine 1 cup couscous, a pinch of salt, and 1 tablespoon olive oil in a bowl. Add 1 cup boiling water, cover for 5 minutes, then fluff. Stir in a drained can of chickpeas, lemon juice, and chopped cucumber.

3. Quick-cook oats, savory style. Pour 1 cup boiling water over 1/2 cup rolled oats, cover for 5 minutes, then stir in a fried egg, scallions, and a dash of hot sauce. Yes, dinner oats. Yes, they work.

4. Blanched greens and shrimp. Put 12 ounces thawed, peeled small shrimp in a bowl and pour over boiling water to cover. Let sit 3 to 4 minutes until pink and opaque, then drain. Toss with garlic, olive oil, and a bag of baby spinach, which wilts from the leftover heat.

5. Pasta, kettle-boosted. Pour kettle water into a pot with salt and bring it back to a boil on the stove in about a minute. Cook 12 ounces of pasta per the package directions, saving 1/2 cup of pasta water for a quick sauce of butter, Parmesan, and black pepper.

Bottom Line

One kettle, five dinners, and not a single burner needed for most of them. Most of these land on the table in under 15 minutes, with barely any dishes. Your tea habit just got a lot more useful.
