Ingredients
6 cups Chex cereal
1 cup mixed nuts
1 cup brown sugar
½ cup butter
¼ cup light corn syrup
1 teaspoon vanilla extract
½ teaspoon baking soda
Directions
1.
Preheat your oven to 250°F (120°C) and line a large rimmed baking sheet with parchment paper to prevent sticking.
2.
In a large bowl, combine Chex cereal and mixed nuts, then set aside until the toffee mixture is ready.
3.
In a medium saucepan, combine brown sugar, butter, and corn syrup, then bring to a boil over medium heat.
4.
Once boiling, allow the mixture to cook for 5 minutes without stirring for the toffee to thicken.
5.
Remove the saucepan from heat and stir in vanilla extract and baking soda until well combined.
6.
Quickly pour the hot toffee mixture over the cereal and nuts, stirring gently to evenly coat everything.
7.
Spread the coated cereal mix onto the prepared baking sheet in an even layer to ensure consistent baking.
8.
Bake in the preheated oven for 45 minutes, stirring every 15 minutes to prevent burning and ensure even coating.
9.
Remove from the oven, let the mix cool completely, and then break into pieces before serving or storing.
