Ingredients

1 pound pork shoulder

¼ cup white vinegar

¼ cup orange juice

2 tablespoons achiote paste

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon dried oregano

1 cup fresh pineapple, diced

8 pieces corn tortillas

1 cup onion, chopped

1 cup cilantro, chopped

1 piece lime, sliced into wedges

Directions

1.

Combine vinegar, orange juice, achiote paste, garlic, salt, pepper, and oregano in a bowl to create a marinade.

2.

Use a zip-lock bag or a large bowl to marinate the pork shoulder in the mixture for at least an hour.

3.

Preheat the grill or a grill pan over medium-high heat before arranging the marinated pork slices.

4.

Grill the marinated pork slices for about 5 minutes on each side until cooked and slightly charred.

5.

Remove the pork from the heat and let it rest for a few minutes before slicing thinly.

6.

Warm the corn tortillas either on the grill or in a dry skillet for around 30 seconds each side.

7.

Assemble the tacos by placing sliced pork, pineapple, onion, and cilantro on each tortilla.

8.

Serve the tacos immediately with lime wedges on the side for an added touch of flavor.
