Ingredients

1 pound ground beef

½ cup bread crumbs

1 medium onion, finely chopped

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon allspice

1 tablespoon butter

3 cups beef broth

1 cup heavy cream

2 tablespoons flour

2 cups baby potatoes, quartered

1 cup carrots, sliced

1 cup peas

¼ cup fresh parsley, chopped

Directions

1.

In a bowl, mix the ground beef with bread crumbs, onion, salt, pepper, and allspice. Form small meatballs using about a tablespoon of mixture for each.

2.

In a large pot, melt butter over medium heat. Add meatballs in batches and brown them on all sides, about 5 minutes per batch, then remove and set aside.

3.

In the same pot, whisk in flour and gradually add beef broth, stirring constantly to prevent lumps. Bring mixture to a gentle boil and allow to simmer.

4.

Add heavy cream to the broth and mix thoroughly. Return the browned meatballs to the pot, along with the baby potatoes and sliced carrots.

5.

Simmer the soup until the potatoes and carrots are tender, about 20 minutes. Stir occasionally to ensure even cooking throughout.

6.

Add peas to the soup and continue simmering for an additional 5 minutes. Stir in fresh parsley just before serving for added flavor and color.
