Ingredients

2 ½ pounds corned beef brisket

1 cup beef broth

2 tablespoons apple cider vinegar

1 teaspoon ground cumin

1 teaspoon chili powder

1 large onion, sliced

2 cups shredded cabbage

12 small corn tortillas

½ cup sour cream

¼ cup fresh cilantro, chopped

1 tablespoon lime juice

Directions

1.

Place the corned beef brisket into a slow cooker and add the beef broth, ensuring the meat is mostly submerged.

2.

Add in apple cider vinegar, ground cumin, and chili powder, then sprinkle sliced onion over the top of the brisket.

3.

Cover and cook on low for 8 hours or until the meat is tender and easily pulls apart with a fork.

4.

Once cooked, remove the brisket from the slow cooker, shred it using two forks, and return it to the liquid in the slow cooker.

5.

In a small bowl, combine shredded cabbage, lime juice, and fresh cilantro. Toss until well mixed and set aside for later.

6.

Warm the corn tortillas in a pan or microwave until pliable, then fill each with a few tablespoons of shredded corned beef.

7.

Top each taco with the cabbage mixture and a dollop of sour cream before serving warm.
