Ingredients

4 pieces red snapper fillets

2 tablespoons olive oil

1 medium onion, diced

1 medium bell pepper, diced

2 cloves garlic, minced

1 can tomato sauce (15 ounces)

1 cup chicken broth

½ teaspoon dried thyme

½ teaspoon paprika

¼ teaspoon cayenne pepper

to taste salt and black pepper

2 tablespoons parsley, chopped

Directions

1.

Preheat oven to 375°F (190°C). Pat the red snapper fillets dry with paper towels and season both sides with salt and black pepper.

2.

Heat olive oil in a large pan over medium heat. Once the oil is hot, add diced onion and bell pepper, and sauté until softened.

3.

Stir in minced garlic and cook for another minute until fragrant. Then add tomato sauce, chicken broth, thyme, paprika, and cayenne pepper.

4.

Let the Creole sauce simmer for about 10 minutes until slightly thickened, stirring occasionally to prevent sticking.

5.

Place the seasoned red snapper fillets in a baking dish. Pour the Creole sauce over the fish, ensuring each fillet is coated.

6.

Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes or until the fish flakes easily with a fork.

7.

Garnish the baked fish with chopped parsley before serving. Serve hot with rice or your choice of side dish.
