Ingredients

1 cup polenta

4 cups water

1 cup milk

2 tablespoons butter

2 tablespoons olive oil

200 grams mushrooms

1 clove garlic

1 teaspoon salt

½ teaspoon black pepper

¼ cup Parmesan cheese

1 tablespoon fresh parsley

Directions

1.

Bring 4 cups of water to a boil in a large saucepan. Once boiling, reduce heat to low and gradually whisk in the polenta.

2.

Continue to stir the polenta frequently, ensuring it does not stick to the pan, for about 30 minutes or until it's thick and creamy.

3.

While the polenta is cooking, clean and slice the mushrooms. Finely chop the garlic for the mushroom mixture.

4.

In a skillet over medium heat, heat the olive oil and butter until melted. Add the garlic and sauté for about 1 minute.

5.

Add the sliced mushrooms to the skillet and cook for about 8-10 minutes, or until they are golden and tender.

6.

Season the mushrooms with salt and black pepper, then stir in freshly chopped parsley before removing from heat.

7.

Once the polenta is ready, stir in milk and Parmesan cheese until fully incorporated and creamy.

8.

Serve the creamy polenta on plates, topped generously with the sautéed mushrooms. Garnish with additional Parmesan and parsley if desired.
