Ingredients

2 pounds chicken thighs

1 cup shoyu (soy sauce)

½ cup water

½ cup brown sugar

¼ cup honey

4 cloves garlic, minced

1 tbsp grated ginger

½ tsp black pepper

2 tbsp cornstarch

2 tbsp water

Directions

1.

In a large pot, combine shoyu, water, brown sugar, honey, minced garlic, grated ginger, and black pepper. Stir well to mix the ingredients thoroughly.

2.

Add the chicken thighs to the pot, ensuring they are fully submerged in the shoyu mixture.

3.

Bring the pot to a boil over medium-high heat, then reduce to a simmer. Allow the chicken to cook for about 30 minutes.

4.

In a small bowl, mix the cornstarch with water to create a smooth slurry. Gradually add this mixture to the simmering chicken, stirring continuously.

5.

Continue cooking over low heat for an additional 15 minutes, or until the sauce thickens and coats the chicken.

6.

Remove the pot from heat and let the chicken rest for a few minutes before serving.
